Besides falling autumn leaves, gifts, Christmas music and time with family; food and desserts may be people favorite part of the Christmas. Christmas themed desserts are especially fun and a great activity for kids and the family. 3/4 c. unsalted butter, at room temperature
1 c. sugar
1 tsp. vanilla extract
1 tsp. almondt extract
2 1/4 c. all-purpose flour
1 tsp. baking soda
1/4 tsp. kosher salt
Green Royal Icing:
8 ounces (about 1 2/3 cups) confectioners' sugar
1/4 cup meringue powder
2 tablespoons green food coloring
20 drops red food coloring
Preheat the oven to 350° Fahrenheit and line 2-3 cookie sheets with parchment paper.
Whisk Dry Ingredients: In a medium bowl whisk together the flour, salt and baking powder. Set aside.
In a large bowl, using an electric hand mixer, cream the butter until smooth. Add in the sugar and mix until well combined. Next add in the egg, vanilla and water and mix until light and fluffy.
Mix Wet and Dry Ingredients: Add the dry ingredients to the wet and mix until just barely full combined.
Split the dough into 2-3 pieces and roll them one at a time on a lightly floured surface until they are ¼ inch thick. Use your favorite Christmas tree cookie cutters (or alternative shapes!) to cut out your cookies. Press the scraps together and set aside to rest for about 5 minutes. Reroll the scraps and cut more cookies until all the dough has been used.
Bake the cookies for 10-12 minutes, until the edges of the cookies just start to turn brown. Let them sit on the sheet a few minutes before moving them a wire rack to cool completely.
For the icing: In a bowl, using an electric hand mixer, combine the ingredients until smooth. If you want it any thicker simply add a tiny bit of powdered sugar, to thin it add a tiny bit of water. The kids love decorating these too!
Allow the icing to completely harden. Then pack and store these cookies in an airtight container.Tips：Be sure the frosting is completely set before storing cookies to avoid them sticking together.
